I've never found any good way to eat carp that I like. I guess if I didn't have anything else, I'd eat one- but they don't taste even in the same category as our native fish. If you like fish patties, that would probably be the best way to fix them. The gar, on the other hand, are really good.

i second that. gar is tasty. kinda a pain to skin though. only thing i ever skint that required a hack saw and tin snips lol.

Hillbilly:
Recurve, just chop that head and tail off with a hatchet or axe, then cut 'em down the back.

mullet:
 I just hacksaw the tail and head to the bach bone and then zip it down the middle. Cut out the backstraps.
