I've only made a few sinew backed bow so take this for what its worth...I found on my latest bow that the back sinew gives me a smoother, cleaner backing than leg sinews. Like I said earlier I used both on this bow and IMO there is no comparison.   As for performance I can't comment. Not enough experience with sinew backings.

I use leg sinew for bow backs and back sinew for hafting points and wrapping feathers.   I always cover sinew on bow backs with another backing to weather protect it, so I have some leeway as to how it looks.  I don't comb it for the same reason...well that and I'm really lazy. :D
