[/quote]it's my understanding and I might be wrong but, the vinegar causes the steel to oxidized with a dark Grey color, which prevents the blade from rusting where it's coated.  After the vinegar bath I tempered the blade hoping it would make the oxidation more durable. It didn't work as well as I would have liked. But it looks real cool!!! And if you are doing the differential quenching it will bring out tHe Hammon similar to samurai sword

Here's a fillet knife from a saw all blade.  Knocked off the teeth, put an age on the back and added antler tine handle
