Ed maybe you have tried your bluegills this way? Scale, fillet dice to 1"- 11/2" pieces.
Quick boil in water or add some beer. -C-  Drain and cool. Dip in drawn butter. Just like lobster! O:)

That sounds good Zuma.I think most any way a bluegill made is pretty good really.I love em just filleted dusted with flour and fried in a 1/4" of light oil till light brown/drained and then just salted....Delicious!!!Makes em taste like a blue gill I guess.I like buttered bread with my fish.No tarter sauce either.I feel the fish are good enough on their own taste wise.
The man who catches and eats a lot of pan fish more than me is Jon W.He knows how to cook em too.Think he deep fat fries his.Delicious too!!!
