need a venison bacon recipe that doesn't use premade mix

I recently heard about a new kind of bacon that I have never tried. I have been everywhere and no one has it. I think it was called "leftover bacon", whatever that is!

Well, I made some and it isn't bad at all other than I got mine a little bit on the salty side. my smoker isn't the best for temp control and I struggled to keep the temps down. The next time it will be a Table spoon or more shorter on the salt. made pecan pancakes for breakfast to go with some. my wife was surprised at how easy it really was to make the bacon.

Did you use Tenderquick or Pink salt and salt? I went to the latter as TQ seems to over salt everything for me once you add enough cure. This way you can adjust the salt to taste and still have the proper amount of cure.
