lol. I’ve thought the same thing. Reminds me of that Seinfeld bit he does when talking about making horse glue.
When you open up the sturgeon bladder to expose the inner bladder it’s actually quite sticky to the touch before even rendering it down. I think this may have put the idea out there for sure.

Yeah, I think anybody who has ever cooked a pot-roast, had the gristle render down to gelatine, then had a little bit of that gelatine dry on a utensil or counter top knows exactly how hide glue was invented. ;D Once someone figured that out with mammal gristle, it wouldn't be a huge leap to fish bladders.
Now, the first person who ever milked a cow? That dude just didn't have both oars in the water.
