The hooves are a bit thin for overlays, but workable. Be especially sure to get the sinew and leg bones-deer are a walking collection of resources, almost every part of one can be used for something.

You can always use the lower leg and hoof for knife handles. And if it is a buck there is always the rack .

Hooves can be used as decoration same with dew claws, teeth for necklace, jawbone for knife handle, fat rendered into a water proofer

As Dana said, the fat is useful too. I don't bother to render it usually though, simply grab a chunk and rub it on (it requires multiple applcations, like linseed oil). Also, any of the guts that you don't use for hafting, containters, or food, can be used to mulch your garden. Meaty tomatoes >:D! Or not :D.
