Title: Mountain Man Dutch oven breakfast

This is an easy one in the Dutch oven, and the guys at Elm Hall last weekend seemed to love it.

1# bacon - browned and crumbled
1# breakfast sausage - browned and crumbled
1 yellow pepper
1 red pepper
1 fresh jalapeno - diced small
green onion to taste
1/4# of sharp cheddar
1/2 bag of hash browns
8 eggs

I let the oven warm up over the coals for a few minutes, then dumped my meat and veggies in to cook the veggies almost soft. Then added the hash browns to let them cook and get flavored. After about 15 minutes I leveled it off in the pot and cracked all eight eggs over it, take a fork and break up the yolks while you spread it around. Cover it back up and let it cook until the eggs are done. Pour the cheese over it all and let it cook until its melted through. Remove from the coals and enjoy!

Some fresh cracked black pepper over that and a cup of coffee on the side and the game is on! 

I do variations on this all the time, and as long as it is outdoors with fresh air and woodsmoke, I never hear a bad word about it!  Thanks for sharing!

Pearly - The Guy that used to do most of the cooking at Our Selfbow Camp, used to make the same thing - plus He would add any left over Venison steak. It was called "Snosh Stew" - Great Viddles ! Bob

I wont be at Dave's, I know this. BUT, I will make it for us at Marshall next spring. You make the biscuits in yours and I'll handle the rest in mine.

J-Dub I'd love to, and appreciate the possible offer. But I have so many invites to fulfill now, I'll never live long enough. Big Dave (DVS) has been trying to get me to Missouri for 3 years and my Indiana bow buddy hasn't seen me in 3 years! Bushy even invited me on a moose hunt last year. Two kids and a wife = no go for now.

Market this as a family friendly trip to South Dakota.  Mt Rushmore, Crazy Horse, Custer State Park, wind Cave National Park, Jewel Cave National Park, Badlands National Park, Deadwood, The Open Cut Mine in Lead (pronounced "leed", the Lead Opera House, Spearfish Canyon, etc, etc....
