Well, I’m optimistically trying to use up some meat before hunting season, and I decided to try making bologna. Got to use all of my meat processing toys one this one. It’s not hard, just a lot of steps. I used half venison and half pork country cut ribs. It made two chubs: one I stuffed with olives, and the other with mac & cheese. Got about 3 lbs total. It turned out great!

Several years ago I ran across an online copy of a 30's-40's hollywood celebrity magazine. An article listed the favorite recipes of famous actors.
One of these looked interesting. An elderly British actor told of using a meat grinder to prepare a mix of shoulder and ham meats. I was a bit suprized that he was basically describing making his own SPAM.
