Good post OO.That's one slick way of doing it.He's worked in a packing plant.I don't have a video of this but I'll describe it being done another way and the deer cannot be frozen.....LOL..The deer is hung by his head from a tree limb.He's ripped from throat to A-hole down the middle.He's opened up on each leg and around each leg too.The neck skin on the back side is skinned enough to tie a small golf ball sized rock in it with a good 5/16" rope like a grommet.The other end of the rope is tied to the bumper of your truck and driven away slowly peeling the deer hide off in one piece.Works slick as a whistle.A really sharp knife is a must.

That deer had just been killed and was still warm, let it sit for a couple of hours and he wouldn't have been able to get the skin off that quickly.

my dad thought that he was getting fast at skinning, then he saw this.( he can skin a deer in 20 to 30 minutes)

I've got friends who have worked in packing plants.They could skin anything fast too.I used to skin coon in less than a minute at the fur shed.Our town had a rendering plant too that the fellas would open up a beef the way I described.Stick a needle into the animal just under the hide that was connected to an air compresser and blow the animal up a bit breaking all of the cords and membrane loose in seconds.Anchor the animal around the head to one wall with a chain.The other end at the neck hide grommeted off connected to an electric wench to the other wall and the hide is off in less than 2 minutes.No knife slits.A clean clean hide.They would do it that fast with a 1200 pound animal too.
If you learn how to keep an edge on a knife the way the packing plant boys do you can use almost any kind of knife,but most times it's done with a slender boning type knife.
The fella on the video wasts a lot of hide that could be used for brain tanning.

Me too!!
If you sharpen the living heck out of most any decent length knife and you should be golden to split the breast plate like that (I prefer to use a really sharp hatchet and just bust through in one swing usually if I'm lucky)
