Title: elm question

I was given 2 small white elm logs about 5 inches in diameter. My question is do you use the under bark sap wood as the back or chase a ring. My intent is to build a his & her set for wife & I.

Right under the bark ,if you are careful taking it off. :)

Thank you Pappy! I should have asked the first time but is the heart wood of any good? In both of these logs the heart is favoring one side leaving a narrow amount of white wood.

The heart wood will look really nice under some kind of finish, in the handle and maybe even the limbs. if the heart wood is in good shape , not moldy or anything, i prefer to use it as much as i can. Don't know any other elm than wych elm but i feel that the heart wood is more dense and crunchy.
