Smead (Soft Mead.) No, it's not really mead. No fermentation, so no alcohol content. Very simple to make:
1 cup purified or spring water
1 cup apple juice or apple cider
8 oz. honey
Bring the water and apple juice to a boil in a saucepan. Once it comes to a boil, add the honey and keep stirring until it blends in. Let it simmer on low for 10 minutes, stirring occasionally. Let it cool and pour into a jar, cap, and put into fridge overnight. The next day, it's ready. It's very rich, so you can pour it into a glass and cut it by half with carbonated water. Or drink as it is. It's also good cut by half with plain kefir.

I tried it. I LIKE it. Made an experimental batch with a little less apple, more water, and a few drops of vanilla extract. very tasty.

I'll have to give this a shot. I make a lot of standard meads but this would be good for the kids or people that don't drink alcohol if I want to serve it in some viking horns! : )
