Title: RAMPS!

I love this little local business that has seafood buyers in fish markets on both coasts that ship in fresh seafood overnight.  They get in some wonderful stuff that we would never otherwise see, things like sea robins, monkfish, cockles, and a bourbon barrel fermented soy sauce from Kentucky that is do die for!

But they just posted on Facebook that they have RAMPS!  I have wanted to try these wild greens since the first time they were described to me.  So guys and gals, do me a solid and post your favorite way of having these delicious things!  Please!

sauteed in a little olive oil till they wilt and the tops crisp up a little and then add some salt.  You'll love em.  Not too different looking than scallions or green onions.  They go great on top of everything, if you ask me (noone does).

Folks around here mix them with scrambled eggs.   I've actually never eaten them.

I come from a ramp rich state (West Virginia) and have only eaten them once. I was always told that if you ate ramps you could not go to school cause they would make you go home. The smell will leak out of your pores and smell like garlic for weeks. The stories abound in WV but I was on a turkey hunt and another hunter invited me to eat scrambled eggs with bacon bits,potatoes and ramps. It was delicious but that was the only time I ever ate them.

Used to go to the Kentucky Bow Classic on Lake Cummberland this time of Year. The Campground was loaded with Ramps - We cooked  them - used them just like Onions. Really enjoyed them ! Bob

Thanks everyone.  I picked up two very fat rainbow trout yesterday and I think they and the ramps are going to be Sunday Dinner for me!

JW,
I pick and eat rampsl every spring! Here in western New York they cover whole hill sides.
The best meal I ever ate was ramps and morels sautee'd in butter and served with grilled back strap and rice! :P

Chop them up fine and add them to your scrambled eggs or tuna fish for sandwich's.

you can add the leaves to a salad, or wilt them in bacon grease with some spinach.

They are great in potato soup! -C-

Crisp up some bacon and sautee the sliced ramps and then mix crumbled bacon, ramps and feta or shredded cheddar and stuff some morels, dredge in egg and bread crumbs and deep fry, great dipped in your favorite sauce! :OK
 I could go on and on but you get the idea, they will be great with your trout.

One thing about ramps though, they don't soften up like onions when you cook them, they will stay crisp and crunchy.

I had read time and time again that ramps were overpowering onion/garlic, but these were mild.  I simply washed, trimmed roots, and cut in half where the green met the white.  I laid the white portion on either side of the trout in the skillet and then laid the greens over top the whites to wilt while the bulp end browned just slightly.

Lemme tell ya, this was great!  I would use ramps in all kinds of things if I had a regular supply that was not $19/lb.  You folks saying you have hillsides "rampant" with them are not appreciative!

I was wandering around the land I hunt in south central Tn this spring turkey hunting and noticed all these green tops that looked like an emerging daffodil plant, I pulled one up to check it out. Immediately I realized it was a ramp, I had never seen one before that I know of. I gave it the taste test, pretty good, like a cross between and onion and garlic with a more complex taste, pretty strong. The onion breath effect lasted for a long time.

As I walked off the ridge into the valley I noticed the hillsides were solid with these plants.

I was on the same hillside a few days ago and there wasn't a sign of them so they must be a springtime only plant.

mix them with some bell peppers, and some mushrooms, hit them with a hot pan until wilted and the peppers are soft with a bit of charred color, then add some fresh tomatoes and get them soft.  Boil some new potatoes in another pot until soft.  Mix all that together for a wonderful hearty side dish, served with some pork chops (or better, bone in grilled pork shoulder steak)

Any one got a picture Of ramps " on the hoof"?  I had not heard of them until this thread!  Garlic, I got!  Chives, I got!  Ramps sound like a 20-30 inch rain plant!

Swung by my secret ramp spot this morning which coincidentally is on public hunting grounds that is heavily hunted for turkey, but everyone walks right by the ramps...  There are literally thousands of ramps in this area, by far the best spot that I know of.   Looking forward to smoked venison shoulder with sauteed leaks and potato ramps soup tonight!

That little seafood market had ramps and fiddlehead ferns again this spring. Get this...$30/lb!  Again, I only wish I had them growing them here!

Wow, that's crazy!  I'm glad nobody has figured out my spot, it's literally 50 feet from a well-traveled county road.  I literally hide behind trees when cars go by... I was going to transplant some from there to our property as there is some similar habitat but it's too late in the season.  They are a treat but no way I'd pay anywhere near that for them.

Sounds good. Been awhile since I took mucheffort with morning eggs but I used to like scrambling eggs in butter with bacon, vidalia onion, garlic salt and shredded sharp cheddar.

Never seen Ramps locally, but I'll look around for them.

Since garlic is a well known anti-parasitic food, most dewormers for dogs are simply garlic capsules, I wonder if Ramps have the same qualities?

No ramps around here.  I've heard that they make a person rather, um, fragrant.  We do have wild onions that are delicious.  We also have death camas which grows in the same habitats.  Never eat a wild onion that doesn't smell like onions!

Ramps make you no more fragrant than if you eat onions or garlic, imo.  I made some with leftover smoked venison shoulder and eggs this morning, delicious.

You do need to watch out for lily of the valley when picking ramps as the leaves look similar, but no issue if you're taking the whole plant as the lily does not have an onion bulb nor does it smell like onion/garlic!  Some people just pick the leaves of ramp's so plant keeps producing, where I get them there are plenty so I take the whole deal...

I know this is an old thread but it's about to be ramp season again so I'm bumping it. My #1 favorite thing to make with ramps is compound butter. It's incredible on a steak or some fresh baked bread. Here's a simple recipe: https://leitesculinaria.com/110774/recipes-ramp-butter.html.

Ramps grow all over the eastern US so you might even have close by.

I hunted a place that was covered up with ramps, I never thought of transplanting some to my place. The landowner was a peculiar guy, a business genius but pretty stupid on day-to-day stuff. I kept up his land for 12 years with my tractor and chainsaw, he let me invite a couple of guys to hunt the place. One of the guys turned out to be an unethical hunter and I revoked his hunting rights and told the land owner why. The guy took any shot he saw, distance, brush in the way it didn't matter. He wounded and lost 8 deer, three of the bucks he wounded and lost were 150" + bucks. The land owner got mad at all of us and revoked our hunting rights to his land. I no longer had access to the ramp patch.

This year I decided to order some ramp plants online and plant them on my property, I hope they do well.

How did the transplants go? 

I moved about a dozen plants this spring. It's hard to tell because the greens go dead about now so will have to wait until next spring to see if they take.  I'm going to keep an eye on my spot and harvest some seeds to plant as well.  I've heard you can also cut half inch of bulb above roots and plant that as well.

I ordered more ramp plants yesterday; I will put tomato cages around them this year to keep the critters off them until they get established.

Last year I planted ramps on my place to see if they would thrive, some critter dug them up and ate every one of the first night.

I tried again today. I planted two spots with cages over them and a dozen or so spots of individual plants widely spaced out to see if they will be eaten like last year's crop.

I started reading this thread last night and wondered if any grew around me and found they do grow in Ohio. Never knew about ramps but I have done mushrooms and stuff. I live basically surrounded by woods. I started looking around the edge of the woods along the yard and found some of these. I’m guessing it’s a ramp?

I am insanely jealous. A local specialty shop carries sometimes in the spring but they are well north of $30/lb now. I reported on this thread earlier what I did with them.

I am not gonna lie, it was an exceptional meal folks. Exceptional indeed.

I actually read that JW, about the price they charge for them. I’ve been busy building a shed for my wife and after finishing today I was on a ladder looking into my woods and could see some so I took the wife’s little digging tool over and picked a little bunch. Don’t know how to cook them yet but I’ll be looking into that. Cleaned them up and washed them off and put them in a ziplock bag and into the fridge
