Title: Venison rolled roast

I have to evict some of the previous tenants in the freezer as bow season starts here today to make room for the new occupants.  ;D

Looks real good!  We just finished off an elk shoulder roast, slow smoked with crabapple wood for about 2 1/2 hours!  Forgot to take pictures, though. -C- >:D!
