Draw knife edge angle

What is the best edge angle for the work/wood we do? I have this knife, it's not much but it holds an edge reasonably well. The angle just looks kind of steep to me. It was tough to get the camera to focus on the right spot but I think you can see the angle alright.

That does look a bit steep. I always grind mine at 25-30 degrees. Too steep may make it more difficult to dig into the wood and may feel like a workout.

Yeah, I grind much shallower bevel than that, but the honed edge is maybe that sort of angle.

I measured it and it was 40°. I reground it to 25° and it works great. Now I have to wait and see if it still holds an edge.
