Lowest I use is 220 unless I’m starting the edge. I have a 1000/6000 combo stone that works well. I use a strop after with green compound that gets it pretty sharp.

Not sure if the grit, but use Lanskey diamond stones fine through coarse, leather strop, and a ceramic plate about 12,000 grit, if I remember correctly.  When and if I sharpen!  Also have an Arkansas stone 3 grit set, several diamond tools. (lol)

Look into the 'scary sharp' system. The 3M papers are brilliant. The finest 0.3 micron lapping film  is equivalent to something like 60,000 grit :)
I still like my waterstones though. 200 grit to 1000 grit then strop, with compound and then without.

Generally I go 120, 220, 320, 400, followed by stropping with green compound.  I find it to be a somewhat toothy edge that cuts better and lasts longer than a multi thousand grit edge.

With some of the more modern super steels I will add 600 and 1000 grits to the process.

With the exception of straight razors, I hardly ever use my Shapton stones that go up to 10K grit, just not worth the time.

Got 1200,1000,600,400,280,180 haidu stones, they're ok. Generally don't need the finer ones much for tools, only when I want it to be crazy sharp.
