I wonder if you could just hook the heating coil to a light dimmer switch (dial type) then adjust the temp by the amount of volts running through it?

I would think so. The dial is just a simple potentiometer.   When mine went haywire it smelled like it was too hot.  Maybe they are not designed for that high a temp.

my first guess would be to reposition the thermostat/thermocouple probe to a slightly cooler area of the roaster.

if it's an electrical thermostat, perhaps take a reading with an ohm meter at a range of temps (low/med/high).

then do some math so that the correct resistor can be added to 'limit' the true temperature reading by the desired percentage.

I was only hoping to get another 100'degrees out of it.  575-600 max.
