Turtle soup, from "The Art of American Indian Cooking" 
1 lb. turtle meat
2 scallions w/tops, washed sliced
2 1/2  quarts  water
1 pkg (4.5 gym) beef broth
1/2 tsp salt
Simmer meat and scallion in 1 1/2 arts of the water gently for 2 hours, remove and dice meat.  Return to the broth, add beef broth and salt - simmer additional 2 hours.  Serve hot.  You can probably add any other soup type stuff you like.  There might also be a good Cajun recipe out there
I think this recipe is modernized, as the Indians probably did not have beef broth.  I have not tested this recipe.  Might help to soak the meat overnight in spring water if you think it is too gamey.
