Building a bow around an arrow we wish to hunt with is similar to choosing a rifle based on what bullet you want to send down range. Get a feel for the arrow weight, then choose a poundage in a design that will send them the distance you need.
Regarding anxiety building a bow, I think it is a question of persistence and patience. Looking at my "failures," some are from kiln dried oak that did not like 6-12% relative humidity. Some are from choosing the wrong design, and some because I developed a hinge. Currently, I am gluing hickory backs on some less than stellar bows, adding siyahs, you know, playing and enjoying.
