 I have had this before altho it was made from the outer bark, and it was so  good.

LOL I used to have a cocktail or two with ole Euell up on the Deleware River
back in the early seventies. He drank way more than he ate.

I had read about how to make the syrup with shagbark outer bark, and how you should scrub and wash off the lichens and dirt before making the tea.  Then I thought... inner bark doesn't have lichen... and wouldn't need to be scrubbed... and since I am already debarking the staves, it would be just as easy to save the inner bark shavings.  Actually, I think it easier to save the inner bark than the outer.  I have not tasted outer bark syrup, so I can't compare, but it sure was good on pancakes!
