Hickory bark syrup

Loope, yes I like the idea of your method better than scrubbing down a tree to make syrup.

This first batch was a hit.  I gave some to family and a couple friends and they all loved it and wanted more.  I had wondered if it would crystalize, and it did a little.  Every bottle started growing some sugar crystals in the bottom of the jar, like rock candy.  It didn't seem to affect the flavor, and the worst one had maybe a tablespoon of large sugar crystals by the time it was used up.

With the first batch gone, I did some reading about how to reduce the sugar crystallizing and came across the suggestion to add some acid.  I cooked another batch yesterday, adding some powdered acid blend this time.  The taste is still the same, and I am hopeful this will reduce the rock candy effect.  I am bringing some to trade at the classic next week if anyone is interested.
